- 3 eggs lightly beaten
- 1/2 cup (125g) pecans
- 1 onion chopped
- 1tbsp soy sauce
- 1/2 cup breadcrumbs (maybe need more if the mix seems too wet)
- 3 sheets puff pastry
- 1 cup low fat cottage cheese
- 1 cup rolled oats
- Place cottage cheese, pecans. eggs, onion and soy in food processor.
- Add breadcrumbs and oats.
- Cut pastry sheets in half and spoon mix down middle
- Roll over the pastry so it looks like a long sausage roll and stick together using some egg white.
- Cut the rolls into whatever length you prefer.
- Glaze the tops with the egg white
- Pop in the over and cook at about 200c for about 15-20 mins, or until golden brown
Additional ingredients: zucchini, carrot, mushroom, apple.
