SweetPotatoAndLentilSalad
- 2 Sweet potato
- 1 block fetta cheese
- 1 small red onion
- 1 head of garlic or 2 heaped spoons of minced garlic
- 1/2 cup chopped mint
- 2 - 3 handfuls baby spinach
- approx 1/2 - 1 cup brown lentils
- 1 lemon (for juicing)
- bunch of asparagus
- olives
- chop sweet potato into smallish cubes, dice onion, and separate garlic cloves.
- drizzle a roasting pan with olive oil and roast above ingredients and olives until cooked.
- boil lentils in water until al dent.
- wash baby spinach and mint and chop mint.
- chop fetta into small cubes
- toss it all in a salad bowl and serve with a lemon dressing.
- lemon dressing
- juice of 1 lemon & olive oil. (guess amounts)
