SweetPotatoAndLentilSalad

  • 2 Sweet potato
  • 1 block fetta cheese
  • 1 small red onion
  • 1 head of garlic or 2 heaped spoons of minced garlic
  • 1/2 cup chopped mint
  • 2 - 3 handfuls baby spinach
  • approx 1/2 - 1 cup brown lentils
  • 1 lemon (for juicing)
  • bunch of asparagus
  • olives
  1. chop sweet potato into smallish cubes, dice onion, and separate garlic cloves.
  2. drizzle a roasting pan with olive oil and roast above ingredients and olives until cooked.
  3. boil lentils in water until al dent.
  4. wash baby spinach and mint and chop mint.
  5. chop fetta into small cubes
  6. toss it all in a salad bowl and serve with a lemon dressing.

  8. juice of 1 lemon & olive oil. (guess amounts)
