Ingredients
- 300g pork loin steak, sliced into thin strips
- 3 tbsp kecap manis (sweet soy sauce)
- 1 tbsp sesame oil
- 2 cloves garlic, sliced finely
- 2cm piece of ginger, grated
- 2 red chillies, sliced finely
- 2 tbsp peanut oil
- 2 red capsicums, sliced
- 1 bunch baby bok choy, cut into quarters
- 4 spring onions, white parts sliced
- 100g snow peas
- 1 x 800g packet hokkien noodles
- 100g mushrooms, sliced
- 200g bean sprouts
- 1 bunch coriander, leaves finely chopped
- ¼ cup cashew nuts
Method
- Place pork strips in a bowl and combine with kecap manis, sesame oil, garlic, ginger and chilli.
- Heat peanut oil in a large wok over a very high heat. Add pork and stir for a couple of minutes until the meat is browned.
- Add capsicum, bok choy, spring onion and snow peas, stirring for a few more minutes until softened. Add the hokkien noodles.
- Finally add mushrooms, sprouts and coriander, stirring for another 2 minutes.
- Sprinkle with cashews and serve it up.
