Ingredients

  • 300g pork loin steak, sliced into thin strips
  • 3 tbsp kecap manis (sweet soy sauce)
  • 1 tbsp sesame oil
  • 2 cloves garlic, sliced finely
  • 2cm piece of ginger, grated
  • 2 red chillies, sliced finely
  • 2 tbsp peanut oil
  • 2 red capsicums, sliced
  • 1 bunch baby bok choy, cut into quarters
  • 4 spring onions, white parts sliced
  • 100g snow peas
  • 1 x 800g packet hokkien noodles
  • 100g mushrooms, sliced
  • 200g bean sprouts
  • 1 bunch coriander, leaves finely chopped
  • ¼ cup cashew nuts

Method

  1. Place pork strips in a bowl and combine with kecap manis, sesame oil, garlic, ginger and chilli.
  2. Heat peanut oil in a large wok over a very high heat. Add pork and stir for a couple of minutes until the meat is browned.
  3. Add capsicum, bok choy, spring onion and snow peas, stirring for a few more minutes until softened. Add the hokkien noodles.
  4. Finally add mushrooms, sprouts and coriander, stirring for another 2 minutes.
  5. Sprinkle with cashews and serve it up.
