  • 6 chicken drumsticks or 12 drummettes
  • Juice of one large lemon
  • 1 cup panko bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 2 eggs, lightly beaten


  1. Place the drummies in a zip-top bag with the lemon juice and let them marinate in the fridge for at least an hour.
  2. Combine the Parmesan cheese, panko breadcrumbs and salt in a wide, shallow bowl. In another bowl, add the beaten eggs.
  3. Preheat the oven to 220C.
  4. Dip each drumstick in the beaten egg and then roll them in the breadcrumb mixture, thoroughly coating them.
  5. Lay the drummies on a lined baking sheet and spray each one with a little oil.
  6. Bake drummies for 25-30 minutes, until just cooked through and the juices run clear when poked with a sharp knife
