Ingredients
- 500g lima beans
- 1 large red onion
- 4-5 tomatoes, diced
- 3 garlic cloves
- 1/2 bunch parsley
- 1/2 cup olive oil
- 1 tbs plain flour
- 1 tbs oregano
- 2 tbs sweet paprika
- salt and pepper
Method
- Place beans in a large pot filled with water and bring to the boil
- Reduce heat and continue boiling until beans soften through to the center
- Strain beans and keep 1 cup of bean stock aside
- Place beans in a baking tray and add salt and pepper to taste
- Using a frying pan, add olive oil, chopped onion and diced tomatoes and saute over a low heat until caramelised
- Add garlic, flour, oregano, paprika, salt and pepper to taste
- Stir through until well blended, then add 1 cup of bean stock and mix in well
- Add chopped parsley and continue cooking for a further 2 minutes
- Remove from heat and pour over beans in baking tray. Mix through then bake in a preheated oven at 180c until golden brown
