Ingredients

  • 500g lima beans
  • 1 large red onion
  • 4-5 tomatoes, diced
  • 3 garlic cloves
  • 1/2 bunch parsley
  • 1/2 cup olive oil
  • 1 tbs plain flour
  • 1 tbs oregano
  • 2 tbs sweet paprika
  • salt and pepper

Method

  1. Place beans in a large pot filled with water and bring to the boil
  2. Reduce heat and continue boiling until beans soften through to the center
  3. Strain beans and keep 1 cup of bean stock aside
  4. Place beans in a baking tray and add salt and pepper to taste
  5. Using a frying pan, add olive oil, chopped onion and diced tomatoes and saute over a low heat until caramelised
  6. Add garlic, flour, oregano, paprika, salt and pepper to taste
  7. Stir through until well blended, then add 1 cup of bean stock and mix in well
  8. Add chopped parsley and continue cooking for a further 2 minutes
  9. Remove from heat and pour over beans in baking tray. Mix through then bake in a preheated oven at 180c until golden brown
